Baigan Choka


Ingredients

• 1 large eggplant
• 1 small onion chopped finely
• 4 cloves of garlic
• 1 oz margarine
• 1 small wirri-wirri pepper
• Salt to taste

Preparation
• Cut small slits in the side of the eggplant and push in garlic.
• Roast eggplant in oven until soft.
• Remove from oven and slice it down the middle while still hot.
• Scoop out inside into a plate.
• Add margarine, salt, onion and pepper.
• Mix well with a fork.
