  WHY EGGPLANT?

Anyone who decides to consume a healthy and balanced diet, first struggles with the question, What do I eat? Eggplant, not always at the top of the list, has many nutritional benefits.

THE FRUIT
The deep purple and sometimes white fruit is often considered a vegetable. A member of the nightshade family, which includes tomatoes, sweet peppers and potatoes, eggplant is a great low calorie treat.

THE BENEFITS
As well as a low calorie snack, eggplant is also low in sodium. The benefits continue because it's full of minerals, high in soluble fiber (which is helpful in lowering cholesterol levels) and is a great complex carbohydrate

Many foods can help in the healing process and eggplant is also one of these foods. Scorpian bites and frostbite can both be treated by applying eggplant to the affected area.

The fruit has medicinal benefits including reducing bleeding and swelling. Eggplant can also help treat dysentery."An infection of the digestive system that results in severe diarrhea..."(www.wikipedia.org)

WHY NOT EGGPLANT?
Many physicians adivse that people with arthritis or related bone or joint problems not consume eggplant or any other foods from the nightshade family.

The suggestion could be due to something called oxalate. Oxalate is a naturally occuring substance found in animal, plant and human beings. Oxalate can cause health problems when it becomes too concentrated in the body.

Physicians can also suggest no eggplant if you have kidney or gallbladder problems Eggplant also contains a toxin Solanine. Solanine is a calcium inhibitor and can enhance mineral inbalance and increase joint pain and swelling.

THE CONCLUSION
Ask your doctor about eggplant, and if it's okay, start today! Also containing phytonutrients which have antioxidant activity, you can't go wrong with eggplant.

Whether you bake it or boil. Add eggplant to dinner for some variety. To increase the nutritional value, cook the eggplant with the skin on and add other vegetables like tomatoes, onions and peppers.
